Pies and Fudge

Linda's Fruit Pie

Crust

  • 1 cup soaked nuts (almonds, walnuts, hazelnuts or pecans)
  • 8-10 pitted dates
  • 1 tsp. vanilla
  • Soak nuts over night and drain.
  • Process nuts, dates and vanilla in food processor using the "s" blade until it forms a ball.
  • Place in glass pie pan and press flat.

Filling

  • 2 cups fresh or frozen fruit (berries, peaches etc.) Whatever you like.
  • Fresh fruit for topping
  • 8-10 pitted dates
  • Puree frozen fruit and dates, place in your pie shell and top with fresh sliced fruit.

Fudge Too Good

  • 1/2 cup of raisins
  • 1 tsp. vanilla
  • 1 ripe sliced banana
  • 1 cup carob powder
  • 1 cup of fresh ground walnuts (soaked)
  • Add enough water to cover the raisins. Soak for 2 hours. Mix all ingredients in a food processor. Puree to creamy consistency.

Almond Balls/Pudding

  • 1 cup soaked almonds
  • 3/4 cup pitted dates
  • Puree the nuts and dates in a food processor using the "s" blade until it forms a doughy ball. Form into little balls and serve as is or coat with coconut, carob powder or chopped nuts. Keep in the freezer, will last for months. To make a pudding for your baby, take out a portion and just add water.

Pecan Fudge/Pudding

  • 2 cups dehydrated pecans (can be just soaked if you do not have a dehydrator, but the dehydrating brings out the sweetness and the oils)
  • 1 1/2 cups pitted dates
  • Process in a food processor until it forms a doughy ball. Form into a square pan and freeze. If your kids are hounding you for chocolate, you could put in a little cocoa. To make a pudding for your baby, take out a portion and just add water.

Chewy Cherry Fudge/Pudding

  • 2 cups dehydrated pecans
  • 1 1/2 cup dried cherries or fresh
  • 2 Tablespoons of water
  • 1/2 cup raisins
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • Rehydrate cherries with water, Puree the rest of the ingredients in a food processor using the "s" blade until it forms a doughy ball. Form into a square pan, cut into squares and freeze. To make a pudding for your baby, take out a portion and just add water.
